TURKEY CROQUETTES 
8 tbsp. butter
8 tbsp. flour, 2/3 c.
1/2 tsp. salt
1/4 tsp. pepper
2 c. milk

Bread crumbs Egg

Melt butter over low heat, add flour. Cook over low heat until mixture is smooth and bubbly. Remove from heat. Add milk, cook until thick, about 10 minutes. Add meat and stir. Take off of heat. Cool. Put in refrigerator overnight.

Next day take tbsp. of mix and make round balls. Put in bread crumbs then egg, then back in bread crumbs. Put in refrigerator for 1/2 to 1 hour, then roll in bread, egg, bread again. Refrigerate for 1/2 hour, then cook in deep fat until golden brown.
