SALMON SALAD | |
1 1/2 tsp. dehydrated onion flakes 2 tsp. hot water 1/2 tsp. lemon juice 8 oz. drained, skinned & boned canned salmon 3/4 c. diced celery 3/4 c. pared, seeded & diced cucumber 3/4 c. finely chopped carrot 1 tbsp. plus 1 tsp. sugar free mayonnaise 1/4 tsp. salt Dash of white pepper 1 c. lettuce Place onion flakes in small bowl, add hot water and lemon juice and let stand about 10 minutes. In a medium bowl combine all remaining ingredients. Add reconstituted onion flakes and stir to combine. Chill and serve. (Divide into 2 equal servings.) Serve over bed of lettuce. Single serving = 4 ounces protein, 1 cup vegetable, 1 cup salad. |
