PINEAPPLE BULGAR WHEAT SALAD 
1/3 med. avocado
1/3 c. fresh pineapple chunks
3/4 c. cooked bulgar wheat (chilled)
1/4 c. chopped red bell pepper
2 tbsp. chopped celery
1 scallion, thinly sliced
1 tsp. oil
1 tbsp. lemon juice

Peel and cube avocado and stir in pineapple. Pineapple will prevent avocado discoloring. Combine ingredients and toss.
