CURRIED CABBAGE 
2 tbsp. butter
2 tsp. curry powder
3 c. coarsely shredded red cabbage
1 med. onion, thinly sliced
1 med. zucchini, coarsely chopped
1 tsp. lemon juice
1/2 tsp. salt
Freshly ground pepper

1. Melt the butter in a large skillet or saucepan and stir in the curry powder. Add the cabbage and onion. Stir well to coat with the butter. Cover and cook over medium-low heat for 8 minutes, stirring occasionally.

2. Add the zucchini, lemon juice, salt and pepper; continue cooking for 6-8 more minutes, stirring several times.

3. You can also make this in the microwave. Cook the cabbage and onions in the curry and butter on high power (100 percent) for 4 minutes. Add the zucchini, seasonings and lemon juice and cook for another 4 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
