REAL CARROT CAKE 
3 c. shredded carrots
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
2 c. sugar
1 1/4 c. oil
4 lg. eggs
3 c. flour
1/2 c. nuts
1/2 c. raisins

Add and mix well all ingredients. Fold in raisins and nuts. Pour in greased tube pan. Bake at 350 degrees for 1 hour or until done. Frost, if desired.
