BREAKFAST CASSEROLE 
1/2 lb. sausage, cooked & drained
1/4 c. melted butter
1/2 c. evaporated milk
1/2 c. shredded cheddar cheese
3 eggs
1 1/4 c. biscuit mix
2 tbsp. boiling water
2 tbsp. sliced green onions (opt.)

Cook sausage until brown, break into small pieces. Set aside. In a mixing bowl, combine biscuit mix, butter, water and mix well. In a Pyrex pie dish, form a crust with the biscuit mix. Crumble the sausage in the bottom of the crust. Beat the eggs with milk and pour into crust. Sprinkle with onions if desired. Bake, uncovered for 20 minutes at 375 degrees. Then sprinkle with cheese and bake for 5 minutes.
