2 lb. lean beef 2 tbsp. oil 2 med. chopped onion 1 clove garlic, crushed 1 jar (14 oz.) spaghetti sauce (Ragu, etc.) 1 can (16 oz.) stewed tomatoes 1 can (3 oz.) mushrooms, optional 5 oz. med. shell macaroni 1 1/2 pt. sour cream 1/2 lb. provolone cheese, sliced 8 oz. mozzarella cheese, shredded Cook meat in oil and drain. Add onions, garlic, spaghetti sauce, tomatoes and mushrooms. Mix and simmer 20 minutes. Cook macaroni shells according to instructions. Drain and rinse with cold water. Place 1/2 of macaroni shells in 2 1/2 quart casserole. Cover with 1/2 sauce. Spread layer of sour cream over top. Put provolone cheese over this. Repeat layer and top with mozzarella cheese. Cover with foil. Bake at 350 degrees for 40 minutes. Remove foil. Bake until cheese browns. |
