CARROT CASSEROLE 
7 tbsp. butter
1/2 c. chopped onion
3/4 c. shredded Cheddar cheese
1 can cream of celery soup
4 c. cooked carrots
3 c. herbed chicken stuffing croutons

Saute onion in butter until tender. Add cheese, soup and carrots. Mix together and put in 2 quart casserole. Top with stuffing croutons. Melt butter and pour over top. Bake at 350 degrees, 20-25 minutes.
