SPINACH QUICHE 
1 pkg. frozen spinach, chopped
Corn oil, enough to cover bottom of frying pan
1 med. onion, chopped
1/2 lb. fresh or 1 sm. can sliced mushrooms
3 eggs
1 pt. heavy cream
3/4 lb. Muenster or Monterey Jack cheese, grated
2 pie crusts, can use 9 inch frozen shells (the kind made with butter)

Preheat oven to 450 degrees. Prepare spinach; refer to package directions; drain well. Put corn oil in frying pan and saute chopped onion and mushrooms for 10 minutes. In a large bowl, mix 3 eggs, heavy cream and grated cheese. Drain onion and mushrooms and add to above. Add spinach to this mixture. Salt and pepper to taste. Fill two 9 inch pie crusts and bake 35 to 40 minutes in 450 degree oven.
