ALMOND OATMEAL COOKIES | |
1 1/2 c. quick cooking oats 1/2 c. all purpose flour 1/2 c. ground toasted almonds 1/2 tsp. baking soda 1/4 tsp. baking powder 1/8 tsp. salt 1/2 c. granulated sugar 1/2 c. packed light or dark brown sugar 1/2 c. regular stick butter (not spread) or butter, at room temperature 1 lg. egg 1/2 tsp. vanilla extract 1/2 c. sliced almonds Heat oven to 375 degrees. Have cookie sheets(s) ready. Mix oats, flour, ground almonds, baking soda, baking powder and salt. In a large bowl beat sugars, butter, egg and vanilla with a wooden spoon or electric mixer until blended and smooth. Stir in flour mixture, then sliced almonds. Drop rounded teaspoonsful about 2 inches apart on ungreased cookie sheet. Bake 10 to 11 minutes until light brown. Cool on cookie sheet on wire rack 2 minutes before removing cookies to wire rack to cool completely. |
