ALMOND OATMEAL COOKIES 
1 1/2 c. quick cooking oats
1/2 c. all purpose flour
1/2 c. ground toasted almonds
1/2 tsp. baking soda
1/4 tsp. baking powder
1/8 tsp. salt
1/2 c. granulated sugar
1/2 c. packed light or dark brown sugar
1/2 c. regular stick butter (not spread) or butter, at room temperature
1 lg. egg
1/2 tsp. vanilla extract
1/2 c. sliced almonds

Heat oven to 375 degrees. Have cookie sheets(s) ready. Mix oats, flour, ground almonds, baking soda, baking powder and salt.

In a large bowl beat sugars, butter, egg and vanilla with a wooden spoon or electric mixer until blended and smooth. Stir in flour mixture, then sliced almonds.

Drop rounded teaspoonsful about 2 inches apart on ungreased cookie sheet. Bake 10 to 11 minutes until light brown. Cool on cookie sheet on wire rack 2 minutes before removing cookies to wire rack to cool completely.

You could use almond flour, however the recipe author suggests using toasted almonds that have been processed for extra flavor.

Great cookie, same as the Betty Crocker recipe. If you like coconut you can add 1/2 cup.
