YAMBER APPLE PIE 
1 c. self-rising flour
1 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. butter
1/2 c. smoothly mashed canned or cooked sweet potatoes or carrots
1 tsp. lemon juice
3 c. sliced, peeled apples
1 tbsp. molasses

Heat oven to 400 degrees. Grease 9 or 10 inch pie pan.

In medium bowl, combine sugar, flour, cinnamon and nutmeg. Using pastry blender, cut in butter until mixture is crumbly. Reserve 3/4 cup pastry mixture; set aside.

Stir sweet potatoes and lemon juice into remaining pastry mixture; mix until well blended. With floured fingers, press pastry mixture evenly over bottom and up sides of greased pan.

Arrange apples in pastry; drizzle with molasses. Sprinkle with reserved pastry mixture. Bake at 400 degrees for 25-30 minutes or until apples are tender and crust is deep golden brown. Serve warm or cool. 8 servings.
