KIELBASA-CHEESE POTATO TOPPING | |
1 egg 2 tbsp. lemon juice 1/2 tsp. dry mustard 1/2 tsp. salt 1 cup vegetable oil 1 jar (16 oz. pasteurized cheese spread 1 link (about 1/2 lb.) Kielbasa sausage, cut into 1/4 inch cubes 4 jalapeno peppers (seeds removed) chopped In blender, combine egg, lemon juice, mustard, and salt. Blend well and with motor running, gradually add oil until mixture is consistency of mayonnaise. In large heavy saucepan, melt cheese spread. Add the egg mixture, sausage, ad jalapenos, stirring to blend. Remove from heat and store in refrigerator in an airtight container. To serve, heat mixture and spoon over baked potatoes. Yield: 4 cups of topping. |
