SQUASH BREAD | |
3 1/2 c. sugar 1 c. oil 4 eggs 2/3 c. water 3 1/2 c. flour 2 tsp. baking soda 1 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. cloves 1/2 c. nuts (opt.) 2 junior size jars squash baby food Cream oil, eggs and sugar. Add water and beat well. Add spices and mix. Gradually add in flour, mixing well. Stir in nuts and squash. Pour into 2 floured and greased loaf pans. Bake at 325 degrees for 1 1/4 hours. Also makes about 24 mini loaves which are baked about 25 minutes. Optional: Substitute squash with one can of pumpkin or equivalent amount of cooked fresh pie pumpkin or fresh squash (butternut, turban, etc.). |
