BAKED APPLE CUPLETS 
1/4 c. sugar
1/2 tsp. cinnamon
6 baking apples, peeled and cored
2/3 c. flour
1/4 tsp. baking powder
2/3 c. sugar
1 slightly beaten egg
3 tbsp. melted butter
1 tsp. vanilla

Combine 1/4 cup sugar and cinnamon; roll apples in mixture. Place apples in buttered custard cups. Fill apple centers with remaining sugar and cinnamon mixture; set aside.

Combine flour, baking powder, and 2/3 cup sugar. Combine egg, butter, vanilla; add to dry ingredients. Beat well. Spoon batter equally over each apple. Bake in 350 degree oven for 45 minutes until apples are tender.
