CREAM OF BROCCOLI SOUP | |
1 lb. fresh broccoli, coarsely chopped 3 cans (1 1/2 qt.) chicken broth 1 c. hot milk 3/4 c. butter 1/3 c. flour 1 sm. onion, diced 1 c. shredded cheddar cheese 5 strips bacon, diced and sauteed 1/4 c. sour cream Cook broccoli in chicken broth until very soft. Saute onion in butter in large saucepan. Add flour and cook 5 minutes, stirring to combine. Add broccoli and soup stock mixture and bring to a boil. Simmer 10 minutes. While simmering, add cheese and allow to melt. Add hot milk, bacon bits and sour cream. Heat but do not boil. Serves 6. May be frozen. This is delicious. |
