CREAM OF BROCCOLI SOUP 
2 stalks celery, finely chopped
1/4 sm. onion, finely chopped
1 cube butter
3 tbsp. flour
1 (15 oz.) can chicken broth
1/2 bunch broccoli
1 pt. 1/2 and 1/2
1 pt. milk
3 oz. sharp cheddar cheese

Cook broccoli in chicken broth until almost done. In the butter saute celery and onion. Add flour and cook a minimum of 3 minutes, stirring constantly. Add slowly the 1/2 and 1/2 and the milk.

Bring to a high heat being careful not to boil. Add broccoli and broth. Melt in cheddar cheese. Season to taste. Good with French bread! Enjoy!
