POPOVERS 
3/4 c. milk
1 c. flour
3 eggs (small) or 2 lg. eggs
1/2 tsp. salt

Preheat oven to 425 degrees. Grease and preheat iron. Blend all ingredients. DO NOT OVER BEAT. Eggs should be stirred, not beaten. Pour the batter into very hot irons, about 1/2 full. Bake approximately 10 to 15 minutes until the batter "pops" up then turn oven down to 325 degrees and bake until light brown. Serve with honey and butter for breakfast. This is not easy to make, try several times before you give up. This recipe uses a cast iron muffin pan. I don't know if it will work in any other pan.
