HOBO LUNCHEON 
1 lb. ground beef, browned
2 potatoes, sliced
1 onion, sliced
1/2 c. uncooked rice
2 c. grated cheese
1/2 c. celery
1 c. stewed tomatoes

In large casserole layer potatoes, onion, beef, rice, 1 cup cheese and celery. Put tomatoes and remaining 1 cup cheese over that. Top with bread crumbs and dot with butter. Cook covered 1/2 hour, then uncovered 1/2 hour at 350 degrees. Serves 6.
