ZUCCHINI DROP COOKIES 
1 c. zucchini, peeled and grated
1 tsp. baking soda
1 c. sugar
1/2 c. shortening (part butter)
1 egg, beaten
2 c. flour
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. nuts, chopped
1 c. raisins

Beat thoroughly the zucchini pulp, soda, sugar and shortening. Add egg. Beat well. Sift flour and spices. Add dry ingredients with nuts and raisins. Drop by teaspoonfuls on greased baking sheet. Bake at 375 degrees 12 to 15 minutes. Makes about 3 dozen cookies.
