ZUCCHINI BOATS 
4 med. lg. zucchini
1 lb. ground beef, chicken or turkey, lamb
1 sm. onion, chopped
2 clove garlic, chopped
1 oz. fresh basil, oregano, thyme
1 oz. fresh cilantro
1 can tomato soup condensed
1 lb. fresh Parmesan cheese or mozzarella

Slice zucchini in half lengthwise, scrape out pulp save and set aside.

Brown onion and garlic in pan. Add meat and brown. Add fresh spices and simmer. Add zucchini. Let soften.

Spoon mixture into zucchini halves. Top with soup and bake for 20 minutes. As zucchini softens, add cheese and bake until melted. Serves 4-6.
