GREEN BEAN CASSEROLE 
2 c. fresh green beans, cut in 2-inch pieces
2 to 6 slices bacon
1/2 c. chopped onion
4 lg. tomatoes, peeled and chopped
2 lg. whole pimentos, chopped
1/4 tsp. salt
1/8 tsp. freshly ground pepper
1/2 c. shredded cheese

Cook beans, uncovered, in boiling salted water 2 to 3 minutes; cover and cook 20 to 30 minutes or until tender. Drain and set aside.

Fry bacon until crisp; remove from pan, and drain on paper towels, reserving drippings. Crumble bacon. Saute onion in drippings until tender.

Combine all ingredients except cheese, tossing gently. Spoon into greased 2- quart casserole; sprinkle cheese on top. Bake at 350 degrees for 15 to 20 minutes or until cheese is lightly browned. Yield: 6 servings.
