SEAFOOD CASSEROLE | |
1/2 tbsp. butter 1/2 lb. shrimp, peeled and deveined 1/2 lb. scallops 1 clove garlic, minced 1/4 c. green pepper, diced 1/4 c. white wine 1 tsp. lemon juice 1 egg, beaten 1/4 c. mayonnaise 1 tsp. dry mustard 1/2 tsp. salt 1/4 tsp. seafood seasoning 1/8 tsp. pepper 1 lb. backfin crabmeat 1/4 c. seasoned bread crumbs 1/4 c. cheddar cheese, grated Paprika for sprinkling Preheat oven to 400 degrees. Melt butter in skillet; add shrimp, scallops, garlic, and green pepper. Saute for 5 minutes. Transfer contents of skillet to a casserole dish. In a small bowl, mix together wine, lemon juice, egg, mayonnaise, mustard, and seasonings. Beat until well blended. Gently fold crabmeat and bread crumbs into liquid. Pour mixture over seafood in casserole and sprinkle with cheese and paprika. Bake for 15 minutes. |
