FUDGE UPSIDE DOWN PUDDING CAKE | |
1/2 c. brown sugar 1/2 c. white sugar, granulated 1/4 c. cocoa 1 tbsp. butter 3/4 c. sugar 1/2 c. milk 1 c. flour 1 tsp. baking powder 1/2 tsp. salt 1 1/2 tbsp. cocoa 1/2 c. chopped nuts 1 1/4 c. boiling water Sift first 3 ingredients together and set aside. Mix butter and 3/4 cup sugar. Add milk. Sift the next 4 ingredients and add to the batter. Beat thoroughly. Pour into a greased 11 inch cake or pie pan. Cover the batter with the chopped nuts. Spread the sugar and cocoa mixture over the nuts. Pour the boiling water over the top of the sugar and cocoa mixture. Bake at 350 degrees for 30-40 minutes. Test with toothpick for doneness. There will be a thick chocolate sauce at the bottom and the top will have a round, uneven appearance. Cut in squares or wedges taking up the sauce with each serving. Top each serving with whip cream or a scoop of ice cream. This makes 8 generous servings and should be eaten the same day. |
