GERMAN ONION - POTATO SCRAMBLE 
8 slices bacon, chopped
1 c. sweet onion, finely chopped
2 med. potatoes, cooked or raw, finely diced
4 eggs
1/4 tsp. salt
1/8 tsp. pepper
2 tbsp. minced parsley

Brown bacon, drain. In 10 inch skillet saute onion and potatoes until tender. Beat eggs, salt, pepper and parsley together and add bacon. Pour over vegetables in skillet. Cover and cook over low heat until eggs are set. 5-6 minutes. Serves 3 or 4.
