BAKED RICE CUSTARD PUDDING 
1 1/2 c. cooked rice
4 eggs
1/4 c. sugar
3 c. whole milk, scalded
Salt
1 tsp. vanilla
Raisins, about 1/4 c. (opt.)
Nutmeg

Put rice in 1 1/2 quart baking dish. Beat eggs and add salt, sugar and vanilla. Slowly add scalded milk. Pour over rice in baking dish, add raisins and sprinkle top with nutmeg. Bake at 325 degrees for about 1 hour or until inserted knife comes out clean.
