PAVLOVA 
4 egg whites
Dash of salt
3/4 c. sugar
1/2 tsp. vanilla
1 tsp. vinegar
1 tsp. cornstarch

Preheat the oven to 300 degrees. Temperature is reduced for baking. Place a sheet of grease proof paper on an oven tray, brush lightly with melted butter, dust with a little cornstarch. Shake off excess.

Beat the egg whites to a foam, add the salt. Beat until the peaks fold over when the beater is removed. Beat in the sugar, add 1 tablespoon at a time. Beat until stiff. Add vanilla, vinegar and cornstarch. Blend thoroughly.

Spoon the meringue mixture onto prepared tray, forming a 9 inch circle. Bake at 275 degrees for 15 minutes, then at 250 degrees for 1 - 1 1/4 hours. Allow to cool in oven. Place on flat serving plate. Pile with whipped cream and decorate with fruit - kiwi, strawberries, etc.

For gas heat - Preheat to 400 degrees. Bake in lower half of oven for 1 hour at 250 degrees.
