APPLE RAISIN OAT BRAN MUFFINS 
1/2 c. plus 2 tbsp. Puritan oil
1/2 c. honey
1/4 c. plus 2 tbsp. skim milk or lowfat milk
1 1/4 c. oat bran
1 lg. egg
2 c. chopped apples
1 c. whole wheat flour
1 c. raisins
1 1/2 tsp. baking powder
1/4 tsp. baking soda

Preheat oven to 375 degrees. In large bowl, combine oil, honey, milk and egg.

In separate bowl, stir together flour, baking powder, baking soda and oat bran. Gradually add dry ingredients to the wet ones until lightly blended. Stir in apples and raisins, fill greased or lined muffin tins 2/3 full. Bake 25 minutes until brown. 10-12 muffins.
