PECAN PIE BARS
1 (2 layer size) yellow cake mix
1/4 c. butter, softened
1 beaten egg
3 eggs
1 c. light corn syrup
1/2 c. packed brown sugar
1 tsp. vanilla
1 c. chopped pecans

Set aside 2/3 cup of yellow cake mix. Combine remaining cake mix, butter and beaten egg. Stir by hand until mixture is crumbly. Press the mixture evenly over bottom and 1-inch up the sides of an ungreased 13 x 9 baking pan.

Bake in a 350°F oven for 15 minutes.

Meanwhile, for filling, combine the 3 eggs, corn syrup, brown sugar and vanilla in a large mixing bowl. Add the reserved cake mix. Stir mixture by hand until thoroughly combined. Spread filling evenly over the previously baked crust and sprinkle with chopped pecans.

Bake in a 350°F oven for 30 to 35 minutes or until filling is set. Cool completely.

Makes 32 bars.
