LEMON - MINT CHICKEN SALAD 
4 whole chicken breasts, cooked in garlic powder, lemon juice, lemon & herb seasoning, fresh ground pepper
4 whole green onions, chopped
1/2 c. pecans
1 1/4 to 1 1/2 c. mayonnaise
Juice of 1 whole lemon
1/8 c. chopped mint

Chop and mix chicken breasts, green onions, pecans with mayonnaise, lemon and mint. Adjust seasoning to taste. Refrigerate well before serving. Serve on a bed of lettuce, in a cantaloupe half-avocado half or stuffed in a tomato. Garnish with fresh mint. Serves 8.
