HAM AND SPINACH CROISSANT PUFFS 
1 tbsp. vegetable oil
1 lg. onion, chopped
2 lg. cloves garlic, crushed
2 c. thinly sliced fresh mushrooms
8 oz. cooked ham, diced
10 oz. pkg. frozen chopped spinach, thawed and drained
3/4 c. Ricotta cheese
1/2 tsp. pepper
1/8 tsp. nutmeg
1/3 c. Parmesan cheese
2 (6 oz.) pkg. all butter croissants

Heat oven to 325 degrees. In 12 inch skillet over medium high heat, heat oil, add onion, garlic, mushrooms and ham; cook 3 to 4 minutes, stirring frequently until onion and mushrooms are softened. Add spinach, Ricotta, pepper and nutmeg; cook 2 to 3 minutes, stirring frequently until well mixed and heated through. Remove from heat and stir in grated Parmesan cheese. Bake croissants. Add mixture to croissants. Makes 4 servings. May substitute cooked chicken or turkey.
