GRUKENSALAT (CUCUMBER SALAD) 
1 lg. cucumber
1/2 tsp. salt
1 tbsp. sugar
1 tbsp. cider vinegar
1 tbsp. minced parsley
1/4 c. sour cream, optional

Peel the cucumber so that a little of the green rind remains. Slice paper thin, sprinkle slices with salt, sugar and vinegar. Serve this way, topped with minced parsley or marinate in salt and sugar 15 minutes, drain off liquid that has accumulated, toss with sour cream, then sprinkle with parsley.

Makes 4 servings as a relish.
