MEG'S PINEAPPLE DELIGHT CAKE | |
1 (20 oz.) can crushed pineapple (do not drain!) 2 eggs 2 cups all-purpose flour 2 cups sugar 1 1/2 tsp. baking soda 1 cup chopped walnuts Preheat oven to 350°F. Mix all ingredients by hand. Pour into greased 9x13-inch pan and bake at 350°F for 35 to 45 minutes or until browned. CREAM CHEESE ICING: 4 tbsp. (1/2 stick) butter, softened 1 (8 oz.) pkg. cream cheese, softened 1 1/2 cups confectioners' sugar 1 tsp. vanilla Mix together and frost cake when cool. Submitted by: Margaret Harris |
