SHRIMP JAMBALAYA 
1/4 lb. ham or bacon, cut in sm. pieces
2 cloves garlic, chopped fine
1 onion, chopped fine
1 rib celery, chopped fine
1 green pepper, chopped fine
Hot pepper to taste
2 bay leaves
1/2 tsp. thyme
2 tsp. parsley flakes
16 oz. can tomatoes
6 oz. can of tomato paste
Salt and pepper to taste
2 lb. clean uncooked shrimp
2 c. cooked white rice

Cook ham or bacon, add garlic, onion, celery, green pepper, and hot pepper. Cook until onion is tender. Add bay leaves, thyme, parsley, tomatoes, and tomato paste. Add salt and pepper to taste. Bring to a boil. Add shrimp and cook 25-30 minutes. To serve, toss cooked rice and shrimp mixture together. Yields 6-8 servings.
