SHRIMP JAMBALAYA | |
3 tbsp. shortening 1 clove garlic, whole 1/2 c. onion, chopped 1/2 lb. precooked ham, diced 1 c. uncooked rice 2 tsp. salt 1/8 tsp. pepper 1/8 tsp. allspice Pinch each - chili powder, basil & cayenne 1/2 c. water 1 lb. can tomatoes 1 (6 oz.) can mushrooms, w/liquid 1 lb. peeled shrimp, uncooked 1/2 green pepper, cut in strips Heat cooker and add shortening. Saute garlic and onion until golden. Stir in ham and rice. Cook until rice is golden. Remove garlic. Add seasoning, water, tomatoes and mushrooms with liquid; mix well. Add shrimp and sprinkle green pepper strips over all. Close cover securely. Place pressure regulator on and cook 5 minutes with regulator rocking slowly. Remove cover and stir. Let stand 5 minutes before serving. |
