GRANDMA FOWL'S BAKED BEANS | |
1 lb. pea beans 1 lg. onion, whole 1/2 to 1 tsp. salt Salt pork, the size of an egg 1/2 - 2/3 c. molasses 1/4 tsp. pepper 1/2 tsp. dry mustard Soak pea beans in plenty of water overnight. In the morning drain the beans and cover with fresh water. Simmer until the skin on a bean curls when you put it in a spoon and blow on it. It should take about 30 minutes. Drain the beans and transfer them to a crock pot or a bean pot. Add just enough boiling water to cover, onion, salt, salt pork, molasses, pepper and dry mustard. Bake in a 250 degree oven or a crock pot for 5-7 hours. Add a little water if necessary. |
