STRAWBERRY-RHUBARB CRUNCH | |
1 c. flour 3/4 c. oatmeal 1/2 c. butter, melted 1 c. brown sugar 3/4 tsp. cinnamon 2 c. strawberry slices 5 c. rhubarb, diced 1 1/2 c. sugar 3 tbsp. cornstarch 1 1/2 c. water 1 tsp. vanilla Combine flour and oatmeal in mixing bowl. Stir in butter, brown sugar and cinnamon until crumbly. Put 3/4 of crumbs in 9x13 inch cake pan and pack down to make crust. Place strawberries and rhubarb over crust. In saucepan, cook sugar, cornstarch and water together boiling until thick. Add vanilla to thickening and pour over strawberries and rhubarb. Sprinkle remainder of crumb mixture on top. Bake at 350 degrees for 1 hour. 12 servings. |
