SAUCY SOUR CREAM MEATBALLS | |
1 lb. ground beef 1/2 c. quick or old fashion oats, uncooked 1 egg 3 tbsp. finely chopped onion 1 tbsp. finely chopped fresh parsley or 1 tsp. dried parsley flakes 1 tsp. salt 1/2 tsp. paprika 1/8 tsp. pepper Combine all ingredients; mix well. Shape into 30 1-inch balls. Place on rack in shallow baking pan. Bake at 400 degrees 15-20 minutes or until done. SAUCE: 2 tbsp. butter 2 tbsp. flour 1 tsp. dry mustard 1 c. water or 1/2 c. water & 1/2 c. canned milk or 1 c. milk 1/2 c. sour cream 1 tbsp. chopped chives Melt butter in large heavy saucepan over medium heat. Combine flour and mustard. Stir into melted butter. Cook and stir until smooth and bubbly. Gradually stir in water or milk. Bring to a boil, stirring constantly. Boil and stir 1 minute. Reduce heat. Blend in sour cream and chives. Add meatballs; heat thoroughly. Serve over rice or noodles. Garnish with chives if desired. Serves 4-6. |
