SHRIMP TOAST 
10 slices day old bread, crust removed
2 lbs. pureed shrimp
1 tsp. salt
1 tsp. sugar
1 tsp. white pepper
1 egg
1 tbsp. cornstarch
2 scallions, finely chopped
Oil for frying

Heat oil to 375 degrees. Mix together all ingredients for 10 minutes. Slice bread in 1/4's diagonally. Spread mixture evenly over bread slices. Fry, shrimp side down, until golden brown.
