BANANA NUT BREAD 
1 1/2 c. sugar
1/2 c. butter
2 eggs
2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 c. mashed bananas (2 or 3)
1 tsp. vanilla
1/2 c. nuts

Preheat oven to 350°F.

Cream together butter and sugar. Add eggs, one at a time, mixing well after each addition. Add bananas and vanilla.

Sift together dry ingredients and add to mixture. Stir in nuts.

Mix only enough to moisten dry ingredients. Do not overmix.

Bake at 350°F about 1 hour (1 large loaf). Bake 35 to 40 minutes for 2-3 small loaves.

Freezes well.
