BANANA NUT BREAD 
1/2 c. shortening
2 eggs
1/4 tsp. salt
1 c. mashed ripe banana
1/4 c. chopped nuts
1 c. sugar
2 c. flour
1 tsp. baking soda

Cream shortening and sugar until light and fluffy. Add eggs and beat well. Stir in mashed bananas and mix well. Stir in nuts. Sift dry ingredients and stir in. Pour into greased loaf pan and bake at 350 degrees for 40 minutes or until toothpick comes out clean.

Yields: 1 loaf or 3 loaves when using small loaf pans.

NOTE: I use small throw away foil pans - very good.
