BAKED POTATOES SUPREME 
1 hard cooked egg, grated
4 c. chopped broccoli, cooked tender crisp, divide
2 lg. white rose potatoes, baked (russets are too dry for this dish)
1/2 c. grated mozzarella cheese
1/2 c. crushed corn flakes
1 tsp. butter per potato

Hard boil egg, cool a little. Peel and set aside. Wash and cut up broccoli, set aside. Bake potatoes in microwave. While they are cooking, cook broccoli until tender crisp. Prepare cheese and corn flakes. Peel potatoes, mash up like baker, stir in butter into meat of potatoes. Top with broccoli, corn flakes, grated egg and cheese. Serve immediately.

Since microwave ovens vary in power, you may need to adjust your cooking time.
