RAINBOW COMPOTE 
1/4 c. honey
1 tbsp. lemon juice
1/2 tsp. finely shredded orange peel
1/4 tsp. ground cinnamon
3 c. (1 c. each) desired fruits
2 oranges, peeled & sliced crosswise
(Or 2 sm. cans mandarin oranges)

Combine honey, lemon juice, orange peel and cinnamon. Drizzle over orange slices in bowl; cover and chill (preferably overnight). Chill remaining fruits. Drain oranges; RESERVE LIQUID.

Arrange oranges in bottom of glass bowl. Top with 3 layers of desired fruits (1 cup each). Pour reserved liquid over fruits. Dot with whipped cream (Cool Whip) and colored sugar sprinkles. Makes 6 servings.

SUGGESTED FRUITS: Strawberries, blueberries, melon, bananas, pineapple, peaches.
