GOLDEN SQUASH SLICES
4 sm. yellow squash (6 to 7 inches long)
1/2 c. flour
1/4 tsp. salt
1/8 tsp. lemon pepper
1/2 tsp. J.D.'s Vegetable Magic
2 eggs
2/3 c. Italian bread crumbs
3 tbsp. grated Parmesan cheese
1/2 tsp. basil leaves
1/4 tsp. thyme leaves
1/4 tsp. oregano leaves
4 tbsp. olive oil

Slice squash into 1/4 inch slices. In shallow dish, combine flour, salt, lemon pepper and Vegetable Magic. In another dish, lightly beat the eggs. In a third shallow dish, combine the bread crumbs, cheese, basil, thyme and oregano. In a large skillet, heat 2 tablespoons olive oil over medium-high heat. Coat each squash slice with the flour mixture, dip into the eggs and coat with bread crumb mixture. Fry the breaded slices until golden brown on each side, about 2 to 3 minutes. Repeat with remaining slices and olive oil. Serve immediately.
