CHRISTMAS PICKLES 
2 gal. lg. cucumber rings
2 c. lime
8 1/2 qts. water

Peel and slice cucumbers, remove seeds. Place in lime water and let stand 24 hours. Drain slices. Wash in cool water and cover with water and soak 3 hours and drain. 1 tbsp. alum 1 sm. bottle red food coloring Water

Mix ingredients and cover cucumber slices in large saucepan. Heat and simmer 2 hours. Drain.

SYRUP:

2 c. vinegar
2 c. water
10 c. sugar
1 pkg. red hots
8 sticks cinnamon

Bring to boil. Pour over rings. Keep lid tight and let stand overnight. Drain and reheat syrup for 3 mornings. The last morning, heat rings, liquid to boiling and pack in jars and seal.
