BAKED POTATO SALAD | |
8 cooked, peeled, and diced potatoes 1 lb. American cheese, diced (or shredded Cheddar) 1 c. mayonnaise 1/2 c. chopped onion Salt and pepper to taste 1/2 lb. bacon, chopped and fried crisp 1/4 c. sliced stuffed olives or salad olives Combine potatoes, cheese, mayonnaise, salt and pepper in a large casserole dish. Top with bacon and olives. Bake at 325 degrees for 1 hour. Serves 12. Can be made at least a day ahead of time. Great warm too! |
