CARROT COINS 
1/4 c. butter
1 c. thinly sliced onion
2 tbsp. all purpose flour
1 tsp. salt
1/8 tsp. pepper
1 1/2 tsp. granulated sugar
1 1/2 c. water
8 c. thinly sliced carrots

Melt butter in large saucepan. Add onion. Saute until soft and golden brown. Mix in flour, salt, pepper and sugar. Stir in water until it boils and thickens. Add carrots. Cover. Bring to a boil. Simmer slowly until tender about 20 minutes. Serves 8.
