CARROT CAKE 
4 (4 1/2 oz.) jars baby carrots
1 c. chopped nuts
4 eggs
2 c. sugar
3 c. sifted cake flour
2 tsp. baking powder
1 1/2 c. Mazola oil
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. vanilla

In large bowl mix 4 eggs, 2 cups sugar. Then add oil, mix; mix again. Sift flour measure. Sift separately baking powder, soda and cinnamon. Sift this into flour and mix lightly with spoon. Add flour into egg mixture and mix. Add carrots, nuts and vanilla and mix. Pour into ungreased tube pan.

ICING:

2 sm. cream cheese, softened
2 c. powdered sugar (sometimes more!!)
2 tsp. vanilla

Bake at 325 degrees for 1 1/4 hours.
