THE SPECIAL OCCASION CHOCOLATE
CAKE
 
2 1/2 c. sifted cake flour
2 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
2 1/2 c. brown sugar, firmly packed
3 eggs
3 (1 oz.) squares unsweetened chocolate
1/2 c. buttermilk
1 c. boiling water
2 tsp. vanilla

Sift flour, soda and salt together. Cream butter and sugar together and add eggs, one at a time, beating after each addition. Melt chocolate, add to batter and mix thoroughly. Sift 1/3 flour into batter, stir well, then add 1/3 buttermilk and keep repeating this until all flour and buttermilk have been added.

Mix in vanilla and boiling water. Pour batter into three 9-inch greased and floured layer pans. Batter is very thin, may want to use a ladle. Bake at 375 degrees for 25 minutes.

ICING:

1/2 c. butter
4 squares unsweetened chocolate
2 eggs
1 box confectioners' sugar
2 tsp. vanilla

Melt together butter and chocolate. Beat eggs and add 1 box confectioners' sugar and vanilla. Add butter mix to this. Continue beating until creamy.

HINT: Use 1/2 cup icing between layers.
