ARTICHOKE QUICHE 
1 (9 inch) pie shell
2 tbsp. butter
1/2 c. chopped green onions
2 eggs
1 tbsp. flour
2/3 c. half and half
1/4 tsp. garlic salt
1 (14 oz.) can artichoke hearts, drained and coarsely chopped
1 c. grated hot pepper cheese
1 c. grated cheddar cheese

Pierce bottom of pie shell and bake at 400 degree for 12 minutes. Reduce oven to 350 degrees. Saute onion in butter. In large bowl, beat together eggs, flour, and cream. Stir in garlic salt, artichokes, 4 cheeses and onion mixture. Stir until well blended. Pour in shells and bake for 45 minutes or until center is firm.
