ZUCCHINI PIZZA | |
8 (4 inch diameter) zucchini or eggplant rounds, sliced 1/2 inch thick 2 lg. ripe tomatoes, sliced 8 slices cheese (Cheddar, Mozzarella or other) 1/2 c. finely diced onion 1/2 c. finely diced green pepper 1 to 2 tsp. oregano 2 tbsp. Parmesan cheese Simmer zucchini slices in 1 inch water for 3 minutes, turning once. Pat dry and arrange on broiler rack. Top each slice with tomato, cheese, a sprinkle each of onion and green pepper, then a shake of oregano and Parmesan. Broil until cheese melts and is bubbly, about 5 minutes. |
